Air-dried peppers, crushed into flakes

These flakes are made by air-drying peppers and then crushing them, so the texture is closer to chilli flakes than a fine powder. Their warmth is often compared with paprika, bringing colour and a gentle kick rather than fierce heat. Turkey is listed as the country of origin.

Sprinkle, stir or infuse

Scatter them over finished dishes, or stir them into hummus and other dips for a little warmth. They can also be steeped in oil or worked into softened butter to make an infused version for drizzling or spreading.
