Coffee & tea: your questions answered

Which coffee filter size do I need?
Filter sizes match the shape of your brewer. Cone filters such as Melitta's #2 and #4 suit drip machines and pour-over cones, with #2 for smaller cones and #4 for larger ones. Specialist drippers use their own shapes: V60 02 filters, such as CAFEC's, fit the V60 02 dripper. Check your machine or dripper's manual for the right size, and choose bleached or unbleached paper to suit your preference.
How do I brew loose herbal tea?
Use about one to two teaspoons of dried herbs per cup, or follow the pack. Pour over freshly boiled water, cover the cup or pot to keep the aroma in, and steep for five to ten minutes; roots and seeds often need longer than leaves and flowers. A fine mesh strainer or infuser basket makes it easy. Store loose tea in an airtight container away from light and moisture.
How should I use coffee syrups and creamers?
Coffee syrups add flavour without much volume, so start with a teaspoon or two per mug and adjust to taste. Creamers, such as Coffee-mate, are made to replace milk or cream and come in flavours more common in the US, like French vanilla and hazelnut. Liquid creamers usually need refrigerating after opening, so check the label, while powdered versions keep well in a cupboard.
